When you cut you need to make sure you aren’t cutting the pre branches just below the.cluster

I think you’re asking about defoliation, taking off leaves, and pruning to clean up the plant?
You might try reading up on “lollipopping”.
I do a heavy defoliation as part of my flip into flowering, leaving only 6-8 nodes at the top of the plant.

There are a lot of different ways to do every step of the grow. Try a few different things and see what works for you.

I agree there is no one right way to do things, but many different ways that work instead you just have to figure what works for your style 
and set-up/nutes/lights

Yes it creates two new tops for each one you top

Its one cola that splits in half. If the main cola is 100%. When you top it this two become 50% ea. This is why you shouldn’t top beyond that. The size drop off goes quick. Lots of little buds is what I’m saying.
In some cases like a mold prone strain small buds vs big colas are a great option to prevent molds so I like to train the heck out of strains like that;)
